Hyacinth Bean
Hyacinth bean graces the garden with glowing shades of purple, lilac, and rose all season long. In addition to being an excellent cut flower, the flowers are edible, imparting a sweet, mild, bean-like flavor that makes them a favorite in our taste tests. The mature seeds are used in Asian, Thai, and Indian cuisine. Quick-growing hyacinth bean vines also make excellent cover for arbors, fences, and trellises. Alternately known as bonavist-bean and lablab bean.
